Here you go, just in time for Memorial Weekend, my semi-famous “Drunken Chicken” recipe!
If you’re having friends over, or just doing some grillin’ for the family, give it a try. Have a great Memorial Weekend, and Bon Appetit!
Bob’s Drunken Chicken
1/4 cup lemon juice
3 tablespoons melted butter or margarine
6 ounces light beer
3 cloves minced garlic (Use 2 cloves if you prefer milder flavor)
8 boneless skinless chicken breasts (use 1/2 breasts or 4 full)
Combine all ingredients, pour over chicken in a large plastic storage bag and place in a 13x9x2 dish for safe storage. Refrigerate for a minimum of 3 hours, or overnight, turning occasionally. Cook on the grille, to your preference.
Melted butter/margarine will congeal upon contact with cold beer and refrigeration. It looks “funny”, but works beautifully for basting while cooking. My personal tip: I always cook boneless breasts “skin” side down first, then turn and do most of the cooking time “muscle side “down.
